There isn't one definition as it is hard to say, but I would say a game made by a relatively small team (less than 15), with little outside support and minimal to no influence from larger publishers.

They could be payed help, there isn't anything wrong with some payed help. What becomes more of an issue is getting help from like 20 other people and that wouldn't really be considered Indie. But the definition is really hard to pin down on one definition, there is a lot of debate on what is and isn't Indie.

A few I really enjoy are the Final Fantasy series, the Resident Evil series, The Legend of Zelda series, The Mario Series, PAC-MAN, Super Smash Brothers. That’s a few of other games I enjoy

Hmmmm... This is tough...

My all-time favorite is probably Elder Scrolls: Skyrim.

As for my other more recent favorites (as in the past 25 years or so) you probably have heard me mention them before, include but are not limited to:

Elder Scrolls: Oblivion, Dragon Age II, Final Fantasy (series), Spyro (series), Tekken (series), Super Smash Bros Brawl, Sonic (series), Little Big Planet (series), Guitar Hero (series), Infinity Blade, Age of Empires (series), BrainAge (series), Chuzzle 2, Bejeweled, Minesweeper, Solitaire, Mahjong, etc.

Older games I really liked back in the days when they first came out include but aren't limited to:

Zelda Ocarina of Time, Zelda Majora's Mask, TMNT (NES & arcade versions), the Zelda that was on GB, Columns, Tetris, (Qbert, CongoBongo, Centipede, Alien Invaders, Donkey Kong original, I didn't play these until the '80s probably via the Commodore 64 or arcade versions), ahh man there were so many others for the Sega Genesis/Sega CD that I can't remember their names for! There was this f1ghting one I really liked, it was similar to MK style (yeah I had that too 😎, thanks to my uncle) but I want to say it was a StreetFighter but not the Street Fighter we used to play in the arcades. I liked choosing the woman acrobat because her kicks were awesome and could KO opponents easily.... Hmmmmmmm.... It's going to bug me now, lol .....
