We know what gen 10's gimmick's icon looks like
All recent Pokémon games so far have their gimmick's symbol in the Japanese version of logo, with the exception of SwSh which used the Galar league symbol.
Kalos had the Mega Evolution symbol, Alola had the Z-Crystal symbol, and Paldea had the Terastallisation symbol.
Winds and Waves have a mark on the ポ that looks like a gimmick. I think it looks interesting. It looks like a Poké Ball with stylised wings, or one floating on water, and it's multi-coloured like a rainbow, which is a trait only Mega Evolution's symbol shares. I've tried thinking about what it could be, but I just can't figure it out. It has to be something all Pokémon would be able to use to some extent with a few exceptions that get new forms or super-powered versions of the gimmick, especially a Legendary (all Pokémon can use Z-moves but there are species-exclusive ones and Necrozma alone has a form, all Pokémon can Dynamax but only a few can Gigantamax and Eternatus has Eternamax (and Calyrex has a blue aura instead of red for some unexplained reason), all Pokémon can Terastallise but only Ogerpon and Terapagos get forms, and in Z-A all Pokémon can utilise Mega power to use Plus moves but not all can use it to Mega evolve
and Zygarde and Floette get special Megas).
Also, as an unrelated thing I've noticed while looking at these, the effects behind the game's titles look like wings. They could be attacks, but the fact that they look like wings if you put them in order without the text is interesting. Especially considering SV's logos do somewhat hint at things in the game (even if we don't discuss the Koraidon/Miraidon borders that weren't in their announcement, Scarlet's looks old and more natural while Violet's looks futuristic and robotic).

To me it's more one looks like a wing and the other looks like… well, a wave.

It does, but the angle and shape resemble a wing made of water too. Maybe they just did it so the titles match and look the opposite ways like every other game, but they usually don't put extra drawings in the logos and it's even present in all the other languages.

hopefully the gimmick doesn’t take over the whole game like za where you always had to use Pokemon that could mega evolve which limited your options

Well, my educated guess is that in Winds, your Pokémon will gain the ability to "Fly" while in Waves, it'll be the ability to "Surf". So, it'll basically determine the means of getting from point A to point B within the game since it'll be an open world title like ones before it. Koraidon in Scarlet gained the ability to Fly(permanently may I add) in the DLC, hence that'd sort of be the means of travel in Winds while in Waves, it'll be something along the lines of the Surf mechanism where you travel amongst the water except it could be wave riding like in the Alola games(aka Mantine Surfing). Whether they retain the instant travel I don't know. It could also be a clue as to what the Box Legendary does or is strong at.

I'm picturing something like Terra, but Pokémon only have two different abilities with the gimmick
Either you can turn them into water, getting increase in Speed and Defense plus the additional typing of Water or you can turn them into angels with large wings, adding Flying and getting a Speed and Attack increase
This right here sucks, though so I know I'm wrong
