Pokémon FireRed and LeafGreen are remakes on their own, and Pokémon Let's Go, Pikachu! and Let's Go, Eevee! are 2nd remakes of 1st generation games to be more accessible for those who don't own collection of retro video game consoles.
Also, every Pokémon game eventually get remake, and since Diamond and Pearl were last remakes released, that makes Black and White version next in line before they get to X and Y remake, unless they plan to do 2nd remake of Gold and Silver, which is doubtful since Let's Go remakes was special promotion for Nintendo Switch, and had synergy with Pokémon Go for mobile devices.
As for the price, it was always like that with Nintendo exclusive games. I had hopes that digital distribution would improve that but then Nintendo decided to shut down eShop on 3DS, and physical copies of games will get only more expensive since they are in limited supply and often are sold or auctioned as collector items instead of pre-owned used video games.

The Let's Go games are not a substitute for gen 1. The gameplay is completely different, and the story and characters also differ.
It is entirely possible for the Game Boy and GBA games to be added to Switch Online at some point. They have already been shown to be compatible with the emulator, so it is just a case of Game Freak and Nintendo approving them for the service.
So far they have refused to do so. Perhaps they have other plans for their release. Perhaps they are saving them for a future collection, or there are remakes in the works. Or perhaps they are holding them to release the next time the Pokémon series has a controversy, to generate some quick good will.
The DS and 3DS games are more awkward to port because of the dual screen format, but in the case of the Pokémon games the second screen is mostly reserved for menus, and the vast majority of the games could be ported across with only an interface rework.
However, I find it much more likely that they would prefer to produce remakes and sell them as new, full priced games. Which is a little sad because current Game Freak design philosophies would likely mean these remakes would not feature a full Pokédex, would have mandatory exp. share and shift battles, and would likely include modern balance changes and fairy type.

@TheJeffers I never played Pokémon Let's Go, because Nintendo Switch is to big for handheld, and not powerful enough in terms of graphics for home video game console of it's generation. Also never liked the decision to remove cel shading from the pokémon games. Only good looking one on Switch is Sword and Shield.
However, Pokémon Let's Go is remake not remaster, thus certain changes to make the game more attractive to new generation of players are reasonable. The basis of the journey around the Kanto in quest to gather complete data for Pokédex however, is still the same.
I also prefer the GBA remake, but it seems unlikely that they will re-release those games on Switch, since Nintendo always had specific reason behind each game, often based around the lack of backward compatibility.
Virtual Console version of 1st and 2nd gen games were released only because 3DS lack slot for GBA cartridges despite having all the necessary hardware for backward compatibility, and other NDS pokémon games besides Black and White were not compatible to transfer pokémon to 6th generation games.

It literally replaces the original game's mechanics with Pokémon Go mechanics and the story takes place after the original games. It is not a remake or remaster. It's a different game.
I personally prefer the original Red and Green to FireRed and LeafGreen. While they are more strictly remakes, the gen 3 me mechanics do make it a very different experience. I love the original look, however the gen 3 graphics also have their own appeal, and the QoL changes are nice.
When it comes to gen 2, HGSS are the definitive versions to my taste, but they are DS games and so share the same portability issues.
