Galar
Galar's climate is the most similar to what I'm used to, and while there are a lot of busy areas, there's some njce forests that I can hang out with my Pokemon in. Also, Sirfetch'd is only found in Galar!
My second choice would be Paldea, as I love Spain's climate and terrain, but the summer can get a little hot.

I almost chose Galar because I've played that game so many times I have the map practically memorized
I love all the locations and would love to explore Hammerlocke's castle!
Plus, as you mentioned, the forest areas would be nice and peaceful
I could probably build a secret fort in the Wild Area just for fun
There would be so much I could do in Galar!
But I love Sinnoh, too, and with it having my favorite Dex it won my vote
