I'm not extreme about it, but I do ship
I couldn't imagine arguing over it or trying to force it to be right (except May and Drew, but that's because Pokémon started that romance and never finished (I wanted it so bad))
But other than that I do ship but I'm not extreme or deep into it

You may be an outlier then because there were people who did things over the whole Serena x Ash in XY. The Dance Episode in Season 3 of XY(aka XYZ season) literally became infamous because of the shipping wars. They were so upset that Serena didn't dance with Ash that they did things they shouldn't have. I used to follow a Poketuber(he's not that active anymore) that held the same viewpoint on Shipping that you do in that he supports all viewpoints(was initially a Pearlshipper but shifted to Amourshipping during XY). Yet when XY was in full swing, he literally had to call out all the people doing crazy stuff over that Dance Episode. Yet overall, I feel that the whole Shipping thing is overhyped because you're literally talking about "kids". If they were Adults that's one thing but kids… seriously get a new hobby as they say.

I think it's one thing to just think about it (especially when the show itself suggests romance) but it's another when you obsess over it
Like, why are you taking it so seriously?

Also, you mentioned two ships (Armorshipping and Pearlshipping)
Based in context I assume that's Ash and Serena and the other is Ash and Dawn
I actually prefer Ash and Misty, but I think the show is better without romance
You see, in the beginning Ash and Misty's crush on each other was used for humor
However, in X and Y (and Z) Serena's crush on Ash was the main point of her character
That may be why I don't like her (I hate romance)
But I don't understand going to war over it

It shouldn't be that big of a deal (especially when you know at least half of the fandom are adults)

Pearlshipping: Dawn x Ash
Negaishipping: Iris x Ash
Amourshipping: Serena x Ash
Stopped caring during Alola since there were three of them(Lillie, Mallow and Lana) but they all had their own cadre of supporters and I'm sure Gen 8 had their own shippings. I'm not a big shipper whatsoever due to my opinion on the matter but if I had to pick one, I'd probably go with Serena. Serena's backstory with Ash was primarily due to Kalos being based on France. Paris has this stereotype of being the city of love(or lovers) so they opted to do Amourshipping as a way to highlight that. That's why I partly blame the writers for giving them bait or reason to get upset in the first place. Yet ultimately the responsibility falls on those who acted on their passion as they say.
Anyways, the reason Serena fell for Ash is because he helped her out(or saved her if you wanted to go that far) when they were really young. I forget what its called but she basically fell for him at a young age from that encounter. Seeing him again on TV reignited her feelings for him along with going on a journey to not only see him but to get out of Rhyhorn training that she hated with a passion. You then combine that with Ash encouraging her to find her own path and supporting her along the way ultimately results in Serena kissing him on the lips as she departs for Hoenn. That last Episode pretty much ended the Shipping Wars as I see it until Gen 9 reignited them with a new female protagonist in Liko. Whether they'll keep her beyond Generation 9 is a question that will soon be answered.

I still think in gen 8 when ash sees Serena again they made her be on a boat sailing away just to keep the rating.

Serena wasn't on the boat. Ash was. For someone that really disliked Journeys, I made a note on watching character return episodes, hence I made a point to watch Episodes involving Alola gang(minus Lillie), Dawn, Lillie, Sophacles and Clemont + Bonnie. Forget if Brock returned(was probably the special on Prime that I coincidentally haven't watched yet… probably should). Anyways, the ending for Serena's Episode has Great Gatsby vibes and is probably the best argument to date in the Shipping wars with respect to Ash since if you take all the symbolism involved, Ash, if allowed to mature/age alongside other characters, will most likely end up with Serena.
Edit: I’d like to also add that Serena’s return episode really put her in a better light. Even if you weren’t the most adamant Amourshipper or really despised it, you have to admit her return Episode was well done. Way better than Dawn’s imo.1 -
Oh, guess it’s been a bit since I watched the episode. If ash was on the boat I think he doesn’t deserve Serena if he didn’t jump off the boat and swim to her.
