Favorite Switch game(s) that is not Pokémon
The Switch has been out for ~8 years and the Switch 2 has been out roughly 6 months. The topic at hand is what is your favorite Switch title or titles that is/are NOT Pokémon related. I'll accept Smash Brothers, if only because it's a fighting game that contains characters that are primarily not of the Pokémon universe.
For myself, my list is relatively short given my Switch library only just started but I have two recommendations. First recommendation is Echoes of Wisdom. While not strong on replay value(most Zelda games rarely excel here), it's a welcome sight if you're sick of the open world Zelda titles like BotW/TotK AND if you're itching to play as Zelda for a change. Only titles where you feasibly control Zelda in any meaningful capacity are on Spirit Tracks(which afaik has no Switch port and is more of a support role if anything), Cadence of Hyrule(indie game that at its core is based on Crypt of the Necrodancer series) or the Hyrule Warriors series(wherein it's not really a Zelda game in a traditional sense but more of a hack + slash). I'm nearly done with my first playthrough of Echoes and so far it's met my expectations, including some OoT/Majora's Mask nostalgia with the Horse Racing. Kind of neat how it notes where you die on the map, which admittedly shouldn't happen if you buy Smoothies or Food items(like in BotW/TotK) to replenish Life and/or Mana(something I won't make the same mistake on a 2nd playthrough).
The other recommendation is Skywalker Saga. It takes all 9 Star Wars movies and effectively combines them all into one game. While they don't follow the movie script by the book, it's still a really fun and nostalgic ride for anyone that is a fan of Star Wars. One thing I will note though if you do intend to pick it up is that you start with Episode VII initially to unlock Scavenger abilities. Until you do, any character that is of the Scavenger Class will effectively be worthless to you and any puzzle that requires a Scavenger to solve cannot be done until you do. The DLC for the game is entirely optional but I must admit that playing as Ahsoka Tano, Cad Bane and Star Wars Rebels characters(like Hera Syndulla or Sabine Wren) is definitely fun. Shame they couldn't include Zeb in this though. I mean they have a Rancor and a Wampa but couldn't be bothered to do Zeb in the DLC pack…. sigh.
So anyways, what are all your favorites? Might give myself and others an idea as to what game to try next.

I believe Fire Emblem is, and I love that game!
I recently discovered FF isn't, but I also love that
SUPER SMASH BROS ULTIMATE!!!
I have put a lot of time and effort into that game!
I anger everyone I play because I have practically mastered it

If we don't include exclusives, my all time favorite game is My Hero Ultra Rumble

Best switch exclusive games on the switch that arent ports/cross-platform would be SSBU, Super Mario Odyssey, Kirby and the Forgotten Land, Pokemon legends Arceus and thats really about it.
Best switch exclusive games on the switch that are ports/cross-platform would be Super Mario Galaxy, Mario Kart 8 Deluxe, Metroid Prime Remastered, Doom (2016), Final Fantasy IX, Persona 4, Sonic Frontiers, Minecraft, and thats about it.
There is Breath of the Wild, Super Mario Galaxy 2, Shadow x Sonic Generations, Splatoon 3, Pokemon Sword/Shield, Final Fantasy VII, and others which are fine games to play.
Personally I have a nice handful of favorite Nintendo games, with most of them not being on the Switch like Super Mario World (SNES), Link to the Past (SNES), Super Mario 64 (N64), Paper Mario (N64), Wind Waker (GC), Bowser's Inside Story (DS), and others that never made it to the Switch (I am not counting the Virtual Consoles or any games Nintendo had as a limited release).
Mass Effect Legendary Edition should be on the Switch or Switch 2, Mass Effect 3 was literally on the Wii U.

Legend of Zelda Tears of the kingdom. I love that game so much! Mario kart 8 deluxe is amazing if you have multiple people but I haven’t played Mario kart world (ns2 exclusive) yet.

Sonic Frontiers is one I really enjoyed on the switch (And all the other Sonic games).
Super Smash Bros is a favorite, I’m not a master, but I’m not bad…I think😅.
The Hyrule Warriors games I also enjoyed a lot.
ToTK and BoTW were really fun to.
I also really enjoyed the first Megaman X legacy collection

out of what hasn't been mentioned yet, i like P3/P4/P5 (picross s3, picross s4, picross s5). the picrosses are pretty much the same game but they have some fair demos to try to see if you like the gameplay/music.
the later ones technically have more modes (mostly added after 1 and 2) though jupiter does patch in new quality of life features to the older ones and there are save data bonus puzzles for owning more than one.

I will say Super Mario Galaxy is a must play for the Switch, could be considered the best 3D Mario game of all time and is an absolute Wii classic. I would even say to play the Wii version. Shame Twilight Princess and Wind Waker never made it to the Switch.

I find the Nintendo Classics on NO to be apart of the Switch Library so yeah… some really good ones in there. I’m a personal fan of both of those SNES titles but also have to note Tecmo Bowl on NES(ditto Tennis since Doubles can be crazy on hardest setting). Not that I want to mention a Pokémon game in a non-Pokémon topic but if we’re including NO, then PMD Red Team has to be up there. Never played PMD either so I’m tempted to give it a go.
I might get a 64 controller if only to do Ocarina of Time. Forget if Smash Brothers is in the 64 Library but if it is, consider that another one to check off for me since I played that a ton with my friend who had it. Main was Link while friend was partial to Samus or Pikachu.
