Turn based battles, and anything to do other than the main two bare necessity quests in every mainline game. I miss being able to do fun things and take mid-battle breaks without pressing the home button or activating sleep mode.

For me, I'd go bold and do a MMO with all regions at play at once. Players would pick a starting region before traveling to other regions in a similar fashion to Ash. Your starter Pokemon can be a regional starter or a Pokemon of your choice if its within reason(like Eevee for example). You can choose to become the top trainer in the world by becoming regional champion and defeating other top trainers or you can choose to do alternative paths like top coordinators(aka May + Dawn) or opt to be a Performer(Serena) or whatever tickles your fancy. Heck you could try and be the best Rhyhorn racer there ever was by breeding/raising your ride. Can similarly raise Ponyta, Doduo/Dodrio and other racing Pokémon. There's also Flying type Pokémon with respect to Sky Battles.
With so many options to the age-old complete Pokedex/become regional champion, it'd fill the void that the recent generations have failed to address while for veteran players it'd stir up memories from ages past. It'd be a massive undertaking but given that Nintendo Online already exists, it should be a financial success.

New Eeveelutions! An Eeveelution of every type would be awesome!
Also for the gimmick, I don't really know, but I want something cooler than crystal hats or bigger Pokemon.
Maybe a region set in Italy? That would be interesting.

What I want from Gen 10 is a return to Unova as well as expanded to the west, the gimmick I want is all of them.
The lore is that it will be a new Legends entry with the current battle system (thank god turn based is fading out).
The Pokemon will be the same in Black/White but in the new areas it will feature some new Pokemon and some returning Pokemon.
One thing I hope this new entry never gets is DLC content, I want it to have complete post-game content like in older entries. This is meant to be expanded Unova taking advantage of all of the new features in the Switch 2.
For the open world I don't care if it becomes semi-linear like in Sword/Shield as long as it is and feels larger than the original. Paldea is a pretty large open world experience but in that it doesn't feel like a real region, rather a giant wild zone. I think Unova would be a good region to jump on after Paldea because it would force the game devs to actually put effort in recreating the charm and detail the region of Unova has.
If the next entry is Black/White remastered or Legends Castelia City I won't buy it.

Gym Leaders would scale in level to your strongest Pokémon in your party with the Ace being +2 levels to give a small challenge. By doing so would permit players to battle Gym Leaders in any order they desire like in Scarlet/Violet but without the drawback of skipping Katy in lieu of Brassius or someone else. Meaning if you start in the Kanto region, you don't have to fight Brock first but can instead challenge another Gym like Viridian where Blue, not Giovanni, is the Gym Leader. Would be kind of awkward to fight Blue with like 2-3 Pokémon though.
As for Pokémon Contests, the same things would apply in that the Battle phase would have Pokémon of roughly equal level to keep things fair. You could have Pokémon Raids against antagonist groups wherein the Boss fights would be against the Kingpin(ex: Giovanni, Cyrus, etc.) and the rewards could be a cache of rare items(like IV/EV items, Ability patches, etc.).
I don't think it'd be too difficult to make something like this but the issue is taking the time to do it right and not rushing things out every ~3 years like Pokémon seems to do the last decade or so. If done right, this game would last a long time while making a bleep ton of money(would use the exact Spaceballs quote but you know why I can't).
