Would someone mind telling me the difference between SM and USUM?

I've looked at it on Google and it sounds like SM has more story while USUM has more content

But what I'm wondering is if I chose to play both would it feel like I'm just doing the exact same thing with minor changes?

I don't have a 3DS to play sadly but I'm just curious

I wasn't into Pokémon 'till Gen 8-ish, so I have no idea, but I've heard they're somewhat notorious for being essentially the same..

I only played Ultra Moon, but from what I've heard, Sun and Moon has a different plot from Ultra, but doesn't contain all of the content. A lot of people who I've heard compare them like Sun and Moon's plot better, but the Ultras have more content and some other bits.

I haven’t played either but I’ve heard USUM is paced better, but the story itself has a few changes that most players didn’t like. SM is a lot slower to play through, especially early on. Narratively they’re similar enough that you could just play one or the other and be fine. USUM does have a really cool post-game story though featuring an alternate universe Giovanni reforming Team Rocket, but this time it’s made up of the leaders of evil teams from past games in the series, so you get to rematch a lot of them like Cyrus, Lysandre and Ghetsis. If that interests you at all, USUM is probably the one to go with, otherwise if the pace of base SM doesn’t sound like a problem for you, it might be better to play that version instead.

So if I play USUM instead of the normal I won't actually feel like I'm missing out on anything plot wise

You will be missing out on a lot. USUM's plot is so much worse. It has a bigger post-game and a lot more features and things (the majority of which are very fun), but the story is much worse. Since you're used to the Switch games, though, I'd like to say that SM has more things in it than SwSh, it's just less than USUM and most of the previous games.
