To get the topic back on hand, Vulpix. There are days where I'm the cold and calculating Alolan Vulpix and then there are days where I am a fire brand Kanto Vulpix. In some ways, I'm honestly surprised Castform isn't a more popular answer given it changes its form depending on the weather(aka your mood). Might throw in Cherrim given it changes its form in Harsh Sunlight.
PS: Cherrim would be a pretty solid Doubles support Pokémon if paired with a Drought partner to take advantage of its ability.
