So we've all gone through Pokémon and found a part that we were like "Let's have more," and then created an entire thing in our head about it.
Correct me if I'm wrong, but I believe it is called "head cannons?" I'm not caught up on today's terminology.

I have two from Legends Z-A.
I have been obsessed with me, Emma, and Ivor ever since the sewers!
I have now made us best friends and we get together for brunch every other weekend. Ivor will say something dumb that will annoy Emma and she'll lecture him about it and I'll just laugh. Sometimes, though, Ivor will hit us with some deep wisdom and me and Emma will just stare at him, jaws dropped, and then he'll say something dumb and we'll sigh with disappointment then laugh over it, shaking our heads.
I visit Canari every Tuesday and Thursday, sometimes Saturday, and we'll have a battle and go out for some coffee. I sometimes make a guess appearance in her videos and her Grandpa loves me. I also always buy her snacks because she gets so sucked into her games that she forgets to eat. I'm going through and watching all her old videos to become a "Canatic" like she wants. Javeen helps me navigate and learn, even watching the videos with me, which makes Lida mad because he continues to refuse watching them with her. Urbain watches Canari with Lida that way she's got someone like she wants, which she appreciates. I make Naveen join me and Canari for lunch sometimes and he slowly gets more comfortable with her. He also shows her his outfit designs, which she absolutely love and they start working together. I have Canari visit Hotel Z, which she loves because it's so peaceful and friendly. She agrees to help Urbain with advertisement. She also loves the MZ Team because we all just be our dorky, chaotic selves, not changing or acting differently around her. I often walk in during her streams, which used to annoy her but she got used to it and is now happy when I come in. I'm also very flirty with Canari (and before that causes a problem I'm close to her age in real life. Don't attack me for age. Besides, I'm talking about my in-game character anyways).
Alright. Done with Z-A until I get farther and find something else.
Me and Akari from Legends Arceus have a sibling relationship and Laventon is like my supportive care-free dad and Cyllene is like my over-protective but very good to me mother. We will literally k1ll something for each other.
Drew and May from the series got together and Harley crashes all of their dates and teases them when they make pathetic excuses for flirting.
Cilan and Brock are inseparable best friends and Iris and Misty get into a lot of arguements like Ash and Iris but with more fire in their words but after arguing they glare at each other for literal hours and then laugh and are best friends.
Nemona and Carmen battle non-stop and visit each other often. Kierran still hates me and I make sure to be extra arrogant around him to anger him more. Me, Nemona, Arven, and Penny go out for picnics every weekend. Also, Geeta hates me deeply because I constantly talk about how bad of a trainer she is (seriously, though, she was not that strong). I force Larry to hang out with me, which he secretly enjoys. Me and Rika gossip together during breakfast once a week.
Me and Peony still go on adventures together, finding more legends and myths people think are fake. We often invite Leon and constantly make the mistake of letting him navigate. We share a good laugh when we get lost and then I take the map. Me and Leon battle often, always having a "champion of a time." Me, Hop, and Sonia have lunch at least once every other month. Me and Kabu jog together twice a week.
Ash and Misty are a thing. Trust me, I was there when it happened!
I made my mom adopt N and give him a proper home. Me and Cilan watch mystery movies and go to train conventions together. I don't actually care for trains but I do it anyways for him.
Lastly,my main partner is my Charizard, Char. We fly everywhere, battle together, joke together, laugh together, have fun together, get lost together, fail together, make food together, solve mysteries together, explore together, solve mysteries together, sleep curled up in a ball in my living room together, stop crime together. I could go on but I think y'all get the point.

Another one is Ash and May.
I think they watch each other eat their favorite food (May sweets and Ash anything that's a meal) and think they're disgusting but then does the same thing when their favorite food pops up and looks just like the other. I also feel like they have a brother sister vibe and sometimes Max and Brock have to go "grocery shopping" while they're actually going to a spa because they need a break before going back to deal with Ash and May's never ending sibling squables.

You are correct on the term headcannon
Although headcannons are about the characters. Not yourself. And this is just me, but its kinda narcissistic
For future reference, talk about the protagonist like they're their own character. Not just yourself
That last headcannon of yours of your Charizard doesn't really fit into the post but it is still a cool idea

But for my headcannons, I think that Elio and Selene liked to play tricks on Lillie with their unfazed faces
This one is for ZA
When you repeatedly fall of the building in ZA, its Canon to the story itself. And when that barrier appears, its just instinct that if you fall off, Corbeau might give either Paxton or Harmony a lecture
And finally, I think that Gloria is a big meme in Potswick when she started out. Kinda like an inside joke for the town. But when she became Champion, it slowly started dy1ng out of respect. But Hop and Victor laugh when ever everyone shuts up when Gloria's around

Hop started a rock band with his Rillaboom and a Toxitricity

There’s a guy called Jax that has a counter to every member of my team- Garbodor vs Vera the Sylveon, Beartic vs Tidal the Tatsugiri, Malamar vs Quiver/Katniss the Decidueye (I haven’t settled on Decidueye’s nickname yet), Garchomp vs Surge the Raichu, Machamp vs Whisper the Absol, and most importantly Greninja vs Cinder the Cinderace2 -

I prefer to do first person because every protagonist is me in my head, just a different body and personality

About the Jax thing you're able to counter pretty easily!
Vera can learn Psychic and Psyshock
Decidueye can learn U-Turn, which, in the original system, let's you switch Pokémon, so you could hit it with 4x and then use 2x Vera.
Whisper had a wide variety of moves, these including Flying and Psychic.
Surge had Draining Kiss and, even though just effective, Surf (or some do, anyways) so you can at least put up with the Garchomp for a while.
Cinder had that one in the bag! A wide variety of F1ghting moves, as well as Electro Ball seems pretty reliable and had a decent advantage!
The only one I can't find anything for is Tidal. Sorry, sushi!

Well, both Cinder and Greninja have Libero/Protean, so they switch types all the time. Plus, it's more about symbolism- Vera's beauty vs the gunk of Garbodor, Beartic is huge vs the small and determined Tidal, Katniss/Quiver's simple, no-nonsense personality vs Mega Malamar amazing hypnosis that could flat out change it, Whisper's strength comes from bonds and his own past vs Machamp's flat-out strength, Surge has had a bad experience with Garchomp before, and Cinder's fiery (pun intended) personality vs Greninja's cold and calculating.
