Gen 1 had 15 Types with Gen 2 and Gen 6 adding 2 and 1 respectively to give us the 18 Types we have now. Of those 15 Types in Gen 1, seven were of the Special Category or Fire, Water, Grass, Electric, Psychic, Ice and Dragon. You'll notice that outside of Dark(which was Special in Gens 2 and 3) and Fairy(which was added later), all are already occupied except one in Dragon. So, if a new Eevee Evolution were to be added, the only feasible one would be a Dragon Type variation. That would make sense given that Umbreon and Espeon share a one-sided relationship in that Dark is immune to Psychic so Sylveon would be immune to whatever the Dragon Type happens to be called.

Personally, I feel they should permit you to evolve Eevee into w/e Type you want, hence giving 18 Evolution varieties and making Eevee arguably the most sought after/caught Pokémon in the game. You still have Sun, Dusk, Shiny and Dawn Stone Evolution paths for Eevee to utilize along with certain items like Metal Coat to create new Evolution paths. I just hope they don't utilize Trade because despite the fact its been around since Generation 1 and the original 4(Gengar, Golem, Alakazam and Machamp), try doing that on Scarlet/Violet with at least double that amount. It gets annoying really fast, particularly if you want to use one on a playthrough.

Yet the issue you'll run into is that Eevee's evolutions always have the same stat distribution. It has one stat of 130(aka its strength), one stat at 110, one at 95, two at 65 and then one at 60. How are you going to make them feel unique while at the same time having similar stats to other Types. It's not an easy thread to needle as they say.
