I don't think they'll make too many eeveelutions so that the community has something to debate about and have fun with. They're probably making one for Legends ZA, but that's because they fumbled with SV's reception from the public, and they need to make up for it.

Though I would love a poison or ghost type eeveelution to come out, I think its most likely do a dragon type so they can have the opposite of Sylvieon.

When they have introduced new Eeveelutions, it is usually to show off a new game mechanic.

The original three demonstrated item triggered evolution. Espeon and Umbreon highlighted the day-night cycle new to gen 2. Leafeon and Glaceon, in addition to being another evolution for a gen 1/2 Pokémon that gen 4 seemed to fill out its Pokédex with, showed location triggered evolution. And Sylveon showed off the new fairy type and Pokémon Amie.

So if we do get a new Eeveelution, it will either be when a new type is introduced (which I do think they will eventually do again someday), when a new mechanic is added, or when that typing plays thematically into a game's story.

Environmental concerns have been a key theme in Pokémon since the first gen, and have been brought into focus in many plotlines, such as the land reclamation commentary in gen 3 or invasive species with the Ultra Beasts in gen 7. It is likely that these themes will crop up again, and Eevee gaining a poison type as a part of a story about pollution is one potential way that could manifest.

I could also see Game Freak dropping a new Eeveelution trio as part of a future gen, but they would probably try to emulate the type weakness symetry of the original trio. Since both types weak to poison, grass and fairy, already have Eeveelutions, it would be a poor candidate for this trio.

In short, a poison type Eeveelution is a possibility, but it is not the most likely candidate by my estimation, and it may require certain circumstances to be realised.

Of course, GF could also randomly decide to drop every missing type Eeveelution in gen 10, so who knows?

I don't know. Vaporeon gets Acid Armor so it might have been wanted to be the first poison Eeveelution.

My trick for remembering how many types there are is that levee plus its evos equal exactly half.
