I reached class 3 and I keep getting one shot or two shot. I removed the negative HP (now my HP boost from emblems is above 0), and I have boosted Def, Sp. Def, and HP from my held items. I don't think it's an issue with Delphox, and I am not willing to use a new Pokémon.

in general attackers are the frailest roles and will usually fall apart when getting dived on by any melee, it's just a matchup difference and you just have to position well, note enemy locations or stay with the team in the backlines. defense doesn't really impact that much as a stat.
