There is 5 Christmas episodes/specials of the anime which does show that Christmas is at least celebrated in some households/places, so maybe it's like where some may choose to celebrate it while others don't.

You’re right! Wild Pokémon probably wouldn’t know about Christmas unless they’d seen a trainer celebrating. But a Pikachu might get excited over some shiny berry wrapping!
