What if...
What if the person in charge of designing pokemon wants to make them more and more detailed? I don't see anything wrong with it but what do you want to see?

I don't think there's a need to pick one or the other as long as they still look like Pokémon and are all in the same art style. Only having simple looking Pokémon or only having complex looking Pokémon is not a good idea as it makes the Pokémon look more similar than they should and makes the new generation's Pokédex look boring and repetitive compared to other gens.

People have been arguing about it for decades. I remember people saying gen 3 Pokémon didn't look like real Pokémon, that they were overdesigned and looked like Digimon, when the games first came out.
There is something of a cycle. New games come out and fans declare them too much of a departure from the rest of the series.
Sometimes this is true and those games remain unpopular ir controversial. But often over time those games are reevaluated and become an accepted part of a series, to the point that fans point to those games favourably to show that newer games aren't true sequels.
