I know theres Salamence and Volcorona but is there anybody else?
And Volcorona is my new favourite fire.

In the basic sun and moon (not ultra's) jangmo-o and mareanie was really hard to get.

An underleveled Salamence would be one of the hardest I think. Even harder if it's shiny, but not by much since it's found through SOS encounters which are more likely to be shiny.
Also Type: Null isn't shiny locked, so you could shiny hunt it through soft resetting, but I think most people expect it to be shiny locked and don't try shiny hunting it. So it's really rare since you only get one in the post game.
