Do you actually plan your teams?
I pretend I do. Then I meet one Pokémon I wasn't expecting to like and the entire spreadsheet in my head collapses. How much planning survives contact with the actual game for you?

…Not at all.

I plan my team like 2 days before I get the game
I'll admit I'm a bit of a tryhard😭
I always look at spawn maps to see the best pokemon available
Sometimes I even import Gibles from Legends Arceus🙃

In GO, I'm one of those dudes giving victory away to the opponents (read: use very weak pokémon all unde 100 CP )

Depends but I generally like to have teams with as much coverage as possible with no Type overlap. So if I like a Fire type in the Dex(ex: Vulpix), I don't grab the Fire starter. Ditto with Water and Grass if I opt to use one, although with all mainline games you have to pick one(whether you use it is entirely up to you) but the option is what I really like.
Yellow version you start with an Electric Type so when it comes to the Grass/Water/Fire trifecta, I'm free to use all or none of it. In some ways I wish we got to pick our starter from the list of Pokémon in the regional Dex, even if it's not a regional starter. Like if I started in Alola, id love to have an Alolan Vulpix for a starter.

The one or two mainline games I played.... Nope, just when I said "I want more of (insert fav pokemon of the day here)". That's the extent of my planning. Lol
In Stadium 1 and 2 yes, I plan.
In TCG, TCGP TCG Live, that's a definite YES! You gotta plan or the battle deck can collapse along with your hopes and dreams of a win.
In UNITE, it depends:
In ranked we wing it when playing with randoms but in the limited time ban/draft pick phase we do our best to cover the bases.
In tournaments, my team discusses things and tries out different combos to highlight our strengths and limit our weaknesses. We also plan out who goes on our ban lists and wing it when necessary (always good to have a backup plan).
For casual stadiums and quicks, sometimes we pre plan other times it's just whatever someone feels like playing and the rest adapt or choose complementary Pokemon who they also like playing as.
Sorry, not sorry, my answers are rarely short.

To me there's always a main plan or even more than one, but sometimes like almost everything else our dear Murphy's law has to do its thing…

Basically, I don't plan before I start playing. I play the game, no looking up on the internet or anything, and see what I find. Then I check the stats of the Pokémon I get and wing it. When I see an opportunity for a crazy strategy, I take it and see how it goes. Oftentimes I'll end up using mostly one Pokémon for the entire game, though I try to level up my others.
For example, in Sun/Moon, when I saw Mimikyu, I knew I needed to have it on my team. So I caught one, and it turns out, a level 100 Mimikyu can breeze through the Elite Four like they're nothing. The Battle Tree keeps me trying new things, though. For Double Battles in the Battle Tree, I have the following strategy, which just clicked in my head one day:
Jolteon with Volt Absorb ability, moveset Lightning, Thunder Fang, Protect, and I can't remember the fourth.
Tapu Koko, with Electric Surge ability, moveset Nature's Madness, Discharge, and a couple others.
Tapu Koko makes the battlefield electric with its ability, boosting electric moves. Jolteon ALWAYS moves first (except against boosted enemies, or Alakazam), and uses Thunder, which somehow always seems to hit. Tapu Koko often, but not always, goes second, using Discharge to heal any damage on Jolteon and damaging both enemies. Rinse and repeat! All the electric moves are boosted, of course. If either is knocked out (usually by a ground type), I'll use various Pokémon, but have had the most success with Vaporeon to counter Ground types and Flareon to counter Steel-Ground types.
I've been meaning to teach Tapu Koko Rain Dance so I can raise the accuracy of Thunder to 100, but haven't gotten around to it yet.
Sorry, got carried away, but the takeaway here is: I wing it, but usually build my team around one or two powerhouses discovered through trial and error.
