I hate approval process so you'll be getting a 2nd reply out of this but TLDR: Also applies to level up HP boost. Which one you roll is predicated on what class you're taking. This only applies if you intend to multi-class. Otherwise its w/e the Hit Dice is for that particular class(which for me is 1D6).

The 2D8 is your Hit Dice. Hit Dice, in a general sense, is what you roll to determine how much HP you’d gain when you level up. How much HP you get is 1D8 + Constitution modifier. The reason you have two D8 is because you are level 2 and the other function of Hit die is that during short rest, you can use them to recover any HP you may have lost in combat. You only regain the Hit Dice after a long rest so use them wisely as they say. My hit die is D6 so I’ll potentially get fewer HP than you will on any given level.

It's also used to determine how much HP you gain when you level up. The die you use is predicated on your class and if a player opts to multi-class, they get different Hit Dice based on the level of class they happen to be. As an example, if I opted to take on a Paladin class(I won't but hypothetically speaking), I'd get a 1D10 Hit dice. I'd also use that to roll for my HP boost since I'm taking on level 1 Paladin upon reaching level 3. Each level you roll a hit dice based on the level of class that you're obtaining. So if I stick to being a Sorceress, I'd roll a 1D6 and add my Constitution modifier.
But as the DM pointed out, they're used to recover HP during a short rest and are generally better to use those than to use Potions or Healing spells. Its just that we haven't really had a reason to use it so far since we've had long rest that replenished our moves + HP. On my side quest, I took some decent damage but I got a long rest out of it. Had I been given a short rest, I may have had to use one to regenerate my HP. Plus Blaze took a hit during Session 1 if I recall but we got a long rest out of it.

And I may be multi-classing if our DM is cool with it
I'll be getting Monk to 5 then focusing on Barbarian until 10 (so I'll be 5 Barbarian)
Then after that I'll switch each level between the two
Once I'm Level 20 I'll be 10 in both class
I just want to be able to Rage, but my Uncle fully explained what that does
I get more damage when doing unarmored strikes as well as more defense (still needing to have no armor)
I also get advantage on Strength throws
And that with my Monk boost of getting more movement without armor (and I'm pretty sure one of my current abilities let me deal more damage if unarmored) and I'm unstoppable
Plus, you can give me magic armor so I can keep myself unarmored but still have the advantage of less damage
So I'll be a high strength, high movement tank

I thought about giving you Mage Armor but your AC is already 15. I'm at 11 so I could really use the +4 AC boost given it was presently just me and you(tied up though, hence just me). Ashes isn't here(yet I hope) and Tinkatink has yet to move so I had to prepare. Plus I don't think I can cast it again unless I spent Sorcery points to do so and I'm not sure its worthwhile to waste them right now when we haven't even reached the actual quest boss. I know that with more AC it makes it harder for the enemy to hit you but given we haven't even used our Hit Dice yet, I think we can stomach taking a hit.
As for your multi-classing, you'd gain 1D8 Hit Dice for each level of Monk you take and 1D12 Hit Dice for every level of Barbarian. I don't intend to multi-class because I have no idea what I'd be doing or whether it'd even benefit my character to do so. Just going to be a simple Defensive Sorceress who will have an axe to grind with that Numel for leading us, deliberately it seems, into a trap.

I'm just saying, though, if we're ever surrounded I can just Rage, use Ki, you give me Magic Armor, and I just rampage

Possibly but I'd wager there was more to it than you being you that led us into this mess. After this fight, I recommend taking a short rest to use Hit Dice(if needed) and anything else we can do(like replenishing spells and what not) in preparation for going after the first instrument. I may have to use Detect Magic to see if I can get a bearing on it. Otherwise, we'll be stuck out in the middle of the desert with no vantage point or where to go next. Granted I suspect the Tinkatink(if its our newcomer) may know the area better than we do.
