Is Internet connection required when Pokemon Sleep is being used during our sleep?

I don't believe so. If you wake up and have lost connection, it will restart the app and when loading in it tells you that it failed to upload data and will try again. I found this out this morning when the game had to relaunch for an update, so your unsaved sleep data can persist between app versions too.
