I'd say Ursaluna. Ursaring was always an older pokemon that was cool off its bear factor, but always felt too generic in design. Ursaluna brings in some of the notable elements from both designs (Teddiursa's moon crested forehead and Ursaring's shoulder tufts) and adds its own mix with the mounds of dirt and soil all over its back and the front paws. It's a cool way to see how Game Freak has evolved in terms of character creation. I also just think it was a subtle, but great improvement overall competitively.
