I played Violet a lot more than Scarlet so I'm not all that familiar with the ones you're saying

Eevee's ability changes from either Adaptability/Run Away(or Anticipation with HA) to an ability based on what it evolved into. Vaporeon gets Water Absorb or Hydration(HA), Jolteon gets Volt Absorb or Quick Feet(HA), Flareon adopts Flash Fire or Guts(HA), Umbreon acquires Synchronize or Inner Focus(HA), Espeon gets Synchronize or Magic Bounce(HA), Leafeon is adorned with Leaf Guard or Chlorophyll(HA) while Glaceon gets Snow Cloak or Ice Body(HA). Finally, Sylveon is blessed with Cute Charm or the godly HA Pixelate.
Can radically change how you play your character and the evolution ability may not even help you.

I have Scarlet, hence I pulled them from my game. Was too lazy to do Z-A for Budew though.
