You have to click on the box which says 'available' or in your 3rd image 'not owned', in order to select the other copies that you own. You don't have 12 Juniper Researches, or 5 minimum rarity Melony, but that is the total amount you own or the various printings those cards have.

The game is timing you out due to 'inaction', even though it doesn't even let you select a starter in the first place. If your opponent Mulligans you will be able to choose. Otherwise it lets your opponent choose first and you get timed out due to inaction so the game automatically selects a starter for you.
