To find your alternate arts of a card, find the normal card and click on it. It'll pop up the card with a button that says "Available" underneath that. Click the available button and it'll pop open a menu which will let you select an alt art version of the card.

You can run different amount of various arts for a card in a deck, the deck manager just does a poor job of displaying it since it will only show you one art of the card to represent them all. The ability doesn't have any restriction on energy type or pokemon type for where it gets attached. All it needs to be is a basic energy (anything not labelled as 'special energy'), and be found on the top 2 cards of the deck from the ability.

The game shouldn't even be letting you play research with 0 cards left in deck to begin with. It would be illegal to do so by the TCG rules. So that's 1 bug/card ruling issue. But it sounds like it bugs if you can't draw 7 cards either, which is another bug in itself.
