How do you do your EV Training?
Me, personally, if the Pokémon I'm training is able to be transferred to Pokémon Sword and Shield, I move it to there and train in Galar. You can't beat the effective 50% discount on Vitamins, availability of Exp Candies/Bottle Caps, and general speed.
Of course, then I move it through HOME to the game I'm playing competitively and teach the TMs I need and all that.

Because I'm a cheapskate I do it the old fashioned way in Scarlet and Violet and beat up Pokemon that give out the EVs I need.

You can max out EVs on your whole party in SV through training with sandwiches so easily now via regular training. Personally I do:
HP: Chansey and Blissey at the Fairy Star Squad base
Attack: Flamigo, Croagunk, and Toxicroak at Lake Casseroya
Defense: Iron Treads in Area Zero
SpA: Girafarig in Area Zero
SpD: Floette in Area Zero or Fairy Base
Speed: Iron Bundle in Area Zero
