I would run a deck that counters Iron Thorns ex for now, just until the meta is less volitile, you could also run a Flutter Mane or Canceling Cologne to make Iron Thorns ex less effective. A general rule of thumb is to either play or counter the deck that wins the first event of a new set until you see the meta spread out.

Palafin ex has an ability that doesn't let it evolve normally, you need the TWM Palafin to switch out of the active.
